Baking Fascination -- Croissants

We've been working since January on getting through the whole issue of Fine Cooking recipes Jan/Feb 2009. It's been delicious work... but I've gotten to the recipe that has been causing me some second thoughts -- the croissant. According to the recipe it takes three whole days of work.
